Ghee is also known as clarified butter and is anhydrous milk fat. It has a longer shelf life than normal butter and can even be used in dishes with particularly high roasting or baking temperatures. When the butter melts, some of the milk protein and the milk sugar, i.e. lactose, are completely washed out.
