Black-eyed peas, also known as cowpeas, are a small, creamy white bean with a distinctive black spot on one end. They are named for this “eye” and are a common ingredient in Southern cuisine, particularly in dishes like “Hoppin’ John,” which is traditionally eaten on New Year’s Day for good luck. These beans are also a good source of protein and fiber.
